      Adam Michael has this to say “Cocoa absolute is dreamy, luxurious, seductive chocolate heaven. The aroma is very straightforward – providing a never ending supply of luxury chocolate notes. To elaborate further, the top note is mouth-watering dark bitter sweet chocolate with a similarity to the taste of eating Cadburys Bornville chocolate. The heart note to my nose contains a juicy kirsch morello cherries nuance that makes me think of my mum’s homemade chocolate cake – always finished with those spectacular tasting cherries.

      Adam Michael has this to say about Cocoa Colourless Absolute “Opening notes are intensely rich dark chocolate, roasted cocoa beans, wet and luscious. The heart is milk chocolate and wholegrain breakfast cereal bars with a pleasant bitter sweetness. Combines especially well with tonka, coumarin notes, coffee, hazelnut CO2, Cherry CO2. Banana CO2, vanilla, honey and provides interesting effects when used with tuberose, osmanthus, blue lotus and even peppermint. Much easier to work with than cocoa absolute but does not have the same tenacity or longevity.”

Odor: Pyrogenic/cocoa bitter, powdery, milky, liqueur like
Use: The powder of the cocoa bean serves as a raw material for a range of Cocoa extracts. The cacao tree, which grows in most tropical countries, develops fruits, more commonly called cabosses, directly on its trunk or branches. When they are harvested, the cabosses are split open with machetes to gather the beans, which are white at this point. The beans are washed, fermented by immersion, and then dried before being exported.
