      Aldehyde C16 (Strawberry Aldehyde) is often also called Strawberry Glycidate it is not in fact an aldehyde at all but an ester. The odour is described as sweet, fruity strawberry-like with floral honey undertones. Apart from the obvious utilisation in strawberry compounds, it is useful in a variety of floral compositions, such as jasmine and rose, adding warmth to a fragrance as well as reinforcing top notes. It blends particularly well with ionones, hydroxycitronellal, woody notes, aldehydes and fruity lactones.
