Use: Lavender is an aromatic evergreen shrub of the same family as mint. This plant, also called true lavender, fine lavender, or English lavender, has deep roots in Provencal tradition. It grows wild in the region’s highlands, particularly in the Alpes de Haute Provence. This French region is one of the world’s key lavender-producing areas. The shrubby bush has a multitude of upright stems rising above a bushy mass of hairy, greyish-green leaves. The fragrant, intense blue-purple flowers bloom in summer. The flowering tops are harvested in July and August, when the summer heat stimulates the rise of the essence into the flower’s secretory glands. The reaped lavender tops are then left to dry to allow excess moisture to evaporate. This one- or two-day wilting period is essential to ensure good-quality lavender essential oil. The fragrance of Haute Provence lavender essential oil is agrestic and floral with an herbaceous note, recalling the sweet scent of the flower spikes in the fields.

Use: Lavender, a plant that is emblematic of Provence, colors its native Mediterranean landscapes with flowers of a deep blue-purple. It grows spontaneously in the Alpes de Haute Provence, one of the world’s leading lavender-producing regions. This small, ball-shaped shrub prefers the highlands, growing best between 500 and 1500 meters. It forms a leafy bush of a gray-green color, which contrasts elegantly with the lavender blossoms. Lavender tops form fragrant flower spikes that bloom in midsummer. Harvesting is done by reaping and takes place during the blooming season. The flower-covered stems are dried for a few days before being distilled. This process removes the excess moisture in the plant to enhance the quality of the essential oil. The resulting fragrance is agrestic, floral, and herbaceous, characteristic of lavender from Haute Provence. The PDO quality adds a delightful fruity facet that blends well with the essence’s more-typical notes.

Use: Maillette lavender is a fine lavender that does not reproduce by seed germination, but by vegetative propagation. It is a clonal lavender that is widely cultivated in Provence on sunny mountain slopes between 600 and 1700 meters. Maillette lavender is a gray-green, dense, evergreen bush that produces long stems topped by flower spikes. The very aromatic, blue-violet flowers form tubular calyxes and give off a pleasant, characteristic odor when rubbed or crushed. The lavender sprigs are harvested in July and August, when the essential-oil quantities in the flowers’ secretory glands reach their peak. They are dried for a day or two in to allow excess moisture to evaporate, then are steam-distilled. The fragrance of Maillette lavender essential oil is agrestic, floral, and herbaceous, with a dry facet.
