Odor: herbaceous, spicy, and earthy, calling to mind celery and angelica
Use: The only member of the genus Levisticum, lovage is a bright-green, perennial plant. The sturdy, hollow stems resemble celery stalks and have multiple shiny, serrated leaves that are also similar to celery. This botanical kinship has earned lovage nicknames in other languages, like "bastard celery" and "perennial celery." The inflorescences are clustered in umbels and bloom into small, yellow flowers in summer. The entire plant is aromatic, exuding a delicate balsamic odor when crushed. Several parts of the plant can be distilled to produce a variety of essential oils. The extract of the whole plant is reminiscent of the smell of cardamom and bergamot, while the essential oil of the seeds is aromatic and floral. But the rhizomes are the most fragrant part: They produce an essential oil that is herbaceous, spicy, and earthy, calling to mind celery and angelica. The thick, spongy roots are harvested around October and distilled in January.

This very interesting and extremely potent material is produced by steam distillation of the comminuted roots of Levistictum Officinale, a man size herb related to angclica and pimpinella.
