Use: Joseph Colbourne has this to say about Bitter Fennel CO2 (SELECT) “Don’t let the name fool you, there is sweetness here… The immediate opening embodies the sensation of inhaling a handful of fresh fennel seeds, perhaps the candied ones used as a digestif at an Indian restaurant. Candied, sweet, anisic, this CO2 spends the first hour in this rapturously delicious state until dries into earthier, peppery licorice and almost rose-like territory. Pair this with citrus to create a luscious effect or include it in rich fougeres to add a spicy sweetness to counter the green characteristics.”
