Notes:
a 34-amino acid polypeptide antibiotic produced by streptococcus lactis. it has been used as a food preservative in canned fruits and vegetables, and cheese. Food preservative, esp. for cheese. Active against Gram-positive bacteria - particularly Clostridium and Bacillus (the antibacterial action applies to both spores and vegetative cells), but also Listeria monocytogenes and lactic acid bacteria. Nisin does not affect Gram-negative bacteria, yeasts and moulds. It has been used for over 50 years commercially as a food preservative without any evidence of bacterial resistance [DFC]
