Constit. of corn syrup. Amylolysis prod. from starch. Maltooligosaccharide mixtures are important food additives (sweeteners, gelling agents and viscosity modifiers) a 1,4-α-D-glucan reacts with H2O to produce maltopentaose. Alpha-amylase catalyzes the reaction.
